Mode of production: fermentation in stainless steel tanks. Production at a controlled temperature not exceeding 30°C for 30 days. Extract partially (50%) in a ton of 500 liters, partially (50%) in a botti of 30 hectoliters for 30 months, and then in a bottle for 12 months.

Tasting notes: ruby color. Aroma with notes of cherry, cranberry, chocolate, shades

vanilla, white pepper. Intense, complex taste with dense tannins, good structure, long aftertaste.

Gastronomy: combines with fried poultry, steaks, game and mature cheeses.
