Valpolicella is a land dedicated to the cultivation of vines since ancient times: its name "vallis polis cellae" actually means "valley of many cellars". The wines in the Valpolicella Ripasso DOC area are made from local grape varieties such as Corvina Veronese, Corvinone, Rondinella and Molinara. Ripasso della Valpolicella DOC Superiore, which is considered the younger brother of Amarone, is a world-famous, unique and inimitable red wine produced using a special oenological technology with a long tradition.
Varietal composition: Corvina, Corvinone, Rondinella
Production features: The grapes are grown in the beautiful rolling vineyards of the Veneto region. Harvesting begins in mid-October. Only manual collection is used. The grapes are brought to the winery, the ridges are separated, after which the berries undergo the vinification process in stainless steel tanks. Maceration lasts 10 to 15 days. Fermentation takes place in stainless steel tanks with temperature control. After that, the wine separates from the pits and skin and IAMBIC begins, which gives the wine velvety, roundness and body. Valpolicella undergoes secondary fermentation for 7-10 days on the pulp from ripasso or richoto. As a result, the wine acquires more color, tannins, texture and body.At the end, the wine is aged in French oak barrels. After aging in oak, the wine is aged in a bottle. According to the law, Valpolicella can be sold only 2 years after harvest.
Taste features: pure intense ruby color with a purple tinge. The bouquet has a pleasant aroma of prunes, red berries, ripe cherries and sweet spices. Notes of vanilla and raisins. Dry wine, full body and velvety tannins. Excellent texture and delicate aftertaste accompanied by sweet spices such as cloves and cinnamon.
Gastronomy: excellent combination with meat dishes with berry sauces. It goes well with meat (roast, grilled), pasta with stew and ravioli with meat. Aged and seasoned cheeses.
